Scone Sandwiches with Apple Butter made easy in microwave

Cinnamon scone and apple butter are a perfect match! We use the whole apple, not discarding apple peels. We make apple jam using peels then combine with the scone dough.

Ingredients (Makes 6)

  • ★30 g Sugar
  • ★6 g Baking powder
  • ★Pinch Salt
  • ★Preferred amount Cinnamon
  • 30 ml Rice-bran oil
  • 50 ml Soy milk
  • Apple butter
  • 1 Apple
  • 30 g Granulated sugar
  • 2 tsp. Lemon juice
  • 50 g Salted butter
  • Apple peel jam
  • 1 Apple peels from one apple
  • 40 g Granulated sugar
  • 1 tsp. Lemon juice

Instructions

1. Apple Butter 1. Peel the apple thickly.  Cut the half into small cubes, and grate the other half.

2. 2. Put the sugar and the above apple in a heat-resistant bowl, and microwave for 5 min. at 600W without wrapping.  The apple should be soft enough to be crushed.

10. 10. Add soy milk in a few times and mix together gently.  Add the apple peel jam and mix without kneading.  (The dough could be a little floury.)

11. 11. Using a scraper, shape it into a square.  Divide into two equal parts and stack them on top of each other. Repeat this for 3 times.

13. 13. Return the dough to room temperature, roll out and divide into 6, any shape of your choice, or use cookie cutters.

Tips

We use apple peels which tend to be discarded, making it even tastier.

Cooking the apple seems tiresome to do, but the first two processes of making apple butter and peel jam are done by just mixing and microwaving so that it becomes very easy.

When making the scone dough, do not stir too well. Stop dealing when it’s still floury. Do not knead the dough.
