The filling of fluffy rice cake is made of apple and cheese. They are the western style rice cake just like cheese cake.

Have cream cheese at room temperature beforehand.
① Peel and core the apple. Then cut into 1 to 1.5 cm cubes.
② In a bowl, gently stir apple, granulated sugar and lemon juice, and cover lightly with plastic wrap. Microwave at 600W for about 3 min.
③ Turn it onto a strainer lined with a paper towel to cool down.
④ Mix cream cheese and sugar in a bowl and work until smooth.
⑤ Add the cooled apple to the cheese and mix well. Divide into 8 on a cooking tray lined with a plastic wrap. Shape roughly into a ball form. Keep refrigerated.
⑥ In a heat-resistant bowl, put Shiratama flour, granulated sugar and red food coloring and mix well adding water little by little until the lumps disappear.
⑦ Wrap the bowl lightly and microwave at 600W for 2 minutes. Mix well. Again, wrap and microwave at 600W for 1 min.
⑧ On a starch floured tray turn the dough and sprinkle starch over. Cut into eight equal pieces.
⑨ Thin out the dough, put an apple filling ball in the middle. Shape into round forms.
⑩ Completed.
-Add water to Shiratama flour little by little to prevent lumps.
-Pull dough out as you wrap the apple filling for a perfect look.
