• Put 90g butter in a bowl and microwave at 600W for 30 seconds or double-boil to melt. Keep melted butter warm.
• Sift flour and baking powder together.
• Preheat the oven to 170°C.
① Core the apple and cut into 1cm dice.
② To make filling, put the butter in a frying pan and place over medium heat. Add the apple, sugar and rum and stir-fry. Turn off the heat once the moisture from the apple has evaporated and they turn golden brown. Cool in the pan.
③ Beat eggs lightly in a bowl, add sugar and beat until fluffy and lemon colored. Add the melted warm butter and mix briefly.
④ Add the flour mixture and blend thoroughly with a spatula.
⑤ Add the apple filling above and mix gently until combined.
⑥ Fill molds with the batter and bake in the 170°C oven for 15 to 20 minutes.
⑦ Bake until a wooden pick inserted in center comes out clean.
You may add some cinnamon powder when stir-frying the filling.
Sweet apples are recommended to go well with spicy ginger flavor.
