Ga pao Style Rice with Chunky Apples

Ingredients, serves 2

200 g ground pork
100 g (1/2) apple
100 g (1/2) onion
50 g (1/4) red bell pepper
1 clove garlic
1 red chili pepper
6 leaves basil
300 g warm cooked rice
1 TBS oil for stir-frying

Seasonings to mix in:
1 TBS fish sauce
1 TBS soy sauce koji
1 tsp soy sauce
4 shakes black pepper
1/2 tsp maple syrup

Side dishes:
2 eggs for fried eggs
Other vegetables of your choice such as green leaf lettuce, purple cabbage, cherry tomatoes, lemon and parsley are used this time.

Instructions

1) Mix all seasonings.

2)Cook the ingredients to make ga pao.
Cut apple and red bell pepper into 1 cm cubes. Mince onion and garlic. Cut red chili pepper into rings with scissors.

Stir-fry chili pepper and garlic in a frying pan over low heat. Once the aroma develops, add onion and sautѐ over medium heat until translucent.

Add ground pork in the pan and stir-fry until the color changes and it becomes crumbly.

Add apple and bell pepper and give it a quick stir. Pour over the mixed seasoning, and stir-fry quickly over high heat. Turn off the heat. Tear the basil leaves by hand and add to the mixture.

3)Heat 1 tablespoon of oil (not included in the ingredients list) in a frying pan and make fried eggs.

4)Scoop cooked rice on a plate and pour ga pao mixture over it, place the fried egg on top. Serve with side vegetables. Sprinkle parsley to garnish.

Just stir-fry quickly over high heat after adding apple. It will become soggy and lose its texture if you overcook.
