“Szarlotka”, an apple cake

Here we introduce to you a Polish apple cake, Szarlotka.


【Ingredients 】Makes one square pan of cake

<Dough/crust>
300g flour
250g butter
5 tablespoons sugar
2 teaspoons baking powder
1 egg
A dash of vanilla essence
<Filling>
1.5kg (about 8) apples
2 tablespoons sugar
Cinnamon powder, to taste
Powdered sugar to garnish

【Instructions】

①Make the dough.

Combine the flour, sugar, baking powder, egg, and vanilla in a bowl.
When the dough is combined, flatten a little and refrigerate.

 

 

②Cook the apples.

Peel and core the apples and slice into long, thin pieces.
Mix with 2 tablespoons of sugar and put them in a pan.
Cook, depending on your preference, uncovered over heat and evaporate any moisture. Sprinkle cinnamon on top and let them cool.

 

③Divide the crust dough into halves.

Spread and press one half into the bottom of the square pan. Fill in the apples. Tear the remaining half of the flattened dough into pieces and cover the apples.
A round pan will do if you don’t have a square one.

 

④Bake for about 50 minutes thoroughly at 180 degrees C. Adjust the baking time for an appropriate finish.

 

⑤Dust with powdered sugar.

 

 

You can serve it hot or cool.

The surface has a crunchy texture and tastes like crumble or cookie. It is a heavy and filling cake. Less-sweetened apples fit well with the crust. It is often served with vanilla ice cream or whipped cream.

You can use any variety of apples for this recipe. Since the volume of apples becomes small when they are boiled down, we would suggest using many apples!
