This time, we will be making “Tender maple simmered chicken thighs with apples,” which is very simple, but the meat is tender and the apples are so delicious.

Soft maple braised apple and chicken thighs

Ingredients for 4 persons

Apple 1
chicken thigh meat 1
salt koji 1 tbsp

Shredded perilla leaves
White sesame

Soy sauce 1 tbsp
Sake 1 tbsp
Sweet sake 1 tbsp
Maple syrup 1/2 tbsp
Water 100ml


1) Cut the chicken thighs into bite-sized pieces, put them in a plastic bag, rub them together with the shio-koji and let them sit for about 10 minutes.

2)the apple into large bite-sized pieces, and shred the perilla leaves for decoration.

3)Heat a pot over medium heat, then add the chicken thighs and apples, skin side down, and fry until lightly browned on both sides. (You don’t need to add oil)

4)Add ★, cover with a lid, and simmer until the water evaporates.

5)Place in a bowl and garnish with shiso leaves and white sesame seeds.
